Here is an easy and delicious cookie recipe that I have made for many many years now:
SCOTCH SHORTBREAD COOKIES
1/2 cup confectioners sugar, well packed
1 cup butter, softened
2 cups sifted all purpose flour
Cream butter, add sugar, then flour, mix well. Pat the dough into an ungreased 8 inch square pan. Prick all over the surface with a fork and press edges down with fork. Bake at 350 degrees (325 degrees if using a glass pan)for about 30 minutes until delicately tan. Cut into squares when cool * ENJOY * ENJOY *
